Homemade Yogurt ~ Tutorial

Yogurt has been a staple in our home for many years.  And we have been making our own for quite a few now.  And I am shocked every time I peek at the price of yogurt in the store and just can't figure out why more people just don't make their own.    Not only is it truly easy to make but it is also frugal, more nutritious and taste so much better.  So while there are many tutorials out there for making yogurt I thought I would share mine in hopes that some of you will be inspired to make your own as well.

First you will need to get your supplies together.  Now don't let this intimidate you,  You don't need anything fancy, none of those expensive yogurt makers.  So here goes:

  • Large pot
  • Mason jars & lids, I use two quart jars as that is how much yogurt I make at a time
  • Thermometer
  • Small bowl or measuring cup
  • Whisk
  • Heating Pad
  • Cooler, I use a soft side I got at the dump store (really any container, even a box would work)
Now for the ingredients.  As I said I make 2 quarts at a time, so that is what I'm going to give you here.  It should be easy enough to adjust to make more or less.  Really, making yogurt is that easy.

  • 2 quarts milk - I use raw
  • yogurt starter - this is the live bacteria you need to introduce to the milk  You have a few options here.  You can purchase a starter at your local health food store or online from someone like Culture for Health.  The next option is to purchase a cup of plain yogurt at the food store.  Just make sure it says it contains live cultures.  Many do.  And once you have your own yogurt you can use a little of the previous batch to make the next batch.
That's it!  You are ready to make yogurt.  I will tell you that this takes a bit of time.  So it is best to do on a day that you will be home.  Most of the time is just waiting for milk to cool and yogurt to culture, so you will be free to do what ever your heart desires, but you should be around.

First you will want to make sure that all your equipment is clean.  You are growing bacteria here so no need to have some nasty strain hanging around.

Next pour the milk into your mason jars and set in your pot.  Fill the pot with water at least half way up the jars.  This is just a water bath.  It is a simple way to heat the milk without scorching it.  And it saves on dishes as the pot should be able to go right back in the cupboard as soon as you are done.

Heat the milk to 180 degrees.  True you milk isn't raw anymore, but this is the safe way to kill any nasty stuff that might be there.  You will also get a nice thick yogurt.  It is hard to get a thick raw yogurt.

Once your milk has reach 180 degrees remove it from the water bath and let it cool to 110 degrees.  This is where you need to be around but not totally tied to your kitchen.  The milk needs to cool so that when you introduce the culture you don't kill the bacteria.

Sorry about the blurry picture.  Not great with my left hand.  And as you can see I missed the 110 mark a bit.  That's because I forgot to take the picture before I started adding the culture.  Shhh don't tell.

Now you are going to pour a little of the milk into a glass measuring cup or small bowl.  To this add your starter yogurt.  I add about 2-4Tbsp of yogurt per quart.  It really is the amount left in the bottom of the jar from the previous batch(If you purchases a yogurt starter, you will need to follow the directions on the package).  Gently mix the milk and your yogurt really well.  Once mixed pour the milk/yogurt mixture back into the rest of the warm milk and mix again.

If you want plain yogurt you are all set.  If you want to flavor your yogurt you can add a little vanilla, honey, or maple syrup now.  I usually make one quart plain and one vanilla.  We don't sweeten our yogurt.  I don't also add fruit or anything else at this point, that way everyone can have it "their way" when the time comes.

All that's left now is to incubate the yogurt.  Basically you need to leave the jars in a warm spot for a while while the bacteria grows.   This is where the heating pad and cooler come in handy.  There are lost of ways to keep the yogurt warm.  I have heard of people using their crock pot or dehydrator.  Some use a cooler and pour the hot water in from heating the milk, just beware that you may have to add more hot water to keep it at temp long enough.  I'd forget.

As you can see, I just put the pad around the jars.  Zip up the lid and let it be.  The longer you incubate your yogurt the more tart and thick it will be.  About the minimum you can incubate is 6 hours.  Then it becomes personal preference.  I will tell you I have forgotten about it and left it overnight, when I was supposed to go in the fridge at 9pm, and it was still amazing the next morning.  So really you can't go wrong.

Once it is done incubating, all that is left is to put it in the fridge.  Warm yogurt is not all that yummy.  But once this had cooled down I promise you it will be some yummy stuff, thick and creamy.  Sorry for the yucky picture here too.  Yogurt just doesn't photograph well for me.

Now this turned into a long post for something that really is simple so here's a recap.

Take your milk and heat it to 180 degrees.
Cool milk to 110 degrees.
Pour off a little of the milk and add your yogurt with live cultures and mix well.
Pour milk/yogurt mixture back into the warm milk and stir to mix well.
Put lids on your jars and keep them warm for at least 6 hours more like 12.
Refrigerate until cold.
Enjoy!

See isn't that easy?  I hope you will give making your own yogurt a try.  It really is so much yummier and truly frugal.

Wild Maine Blueberry Vanilla Muffins

Anyone who knows me knows I love to cook and bake. Sarah has been asking for blueberry muffins for a while now and of course I oblige and make them. However I could tell my attempts were not satisfying her craving. That is until today. This morning I made these heavenly muffins, adapting a recipe from Stonyfield yogurt.

Ingredients
  • 2 cups whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 cup vanilla yogurt
  • 1 1/4 tsp baking soda
  • 1 large egg
  • 1/2 cup coconut oil (vegetable oil would work)
  • 1/2 cup evaporated cane juice crystals
  • 1 tsp vanilla
  • 1 1/2 cups wild Maine blueberries ( our are actually NH blueberries, but most people know the small wild berries as Maine blueberries - go figure)

Preheat your oven to 350 degrees. Generously butter 12 muffin tins (I use the Pampered Chef muffin stone). In a small bowl, sift together the flour, baking powder and salt. Set aside. In another bowl mix the yogurt and baking powder. Set a side. It will start to get frothy. In a third bowl beat the egg. Next add the oil, sugar, vanilla and combine. To this, gradually add the flour mixture alternating with the yogurt mixture. Stir until just combined. Gently fold in the blueberries. Scoop batter into prepared muffin tins. Bake for about 25 minutes until the tops are golden brown. Remove from pan and let cool on a wire rack for a couple of minutes before serving.

These muffins were quick and easy and really quite good for you. I was planning on freezing some to see how they would fair, but there weren't any left. So next time I will double the batch.

Enjoy!

Got Milk!

I headed to the farm today to pick up our first organic raw milk. The girls weren't able to go today, so I promised I would get a picture of the cows that gave them their milk. Aren't the cute. The farm is beautiful! A small family farm found in the middle of nowhere along a one lane mud road. I am already in love and ready to move in. They have been producing raw milk, yogurt, kefir and beef for about nine years. I can't tell you how excited I am to have found them.

I had placed my order at the beginning of the week. So when I arrived today it was waiting for me in the fridge all nicely labeled with my name. I also have a shelf to return my clean empty jars so they will be ready for the next week The milk is so good I know I am going to have to up my order. You can see we already tried a little. The yogurt is wonderfully tart! Just the way I like it. It will be wonderful with our homemade maple syrup!

If you want to know more about raw milk and its benefits check out this article.

Here you can see the two half gallons of milk, a quart of kefir and a quart of yogurt. Don't you just love the glass jars?

A Summer Treat!

We are a family of desert and treat lovers! You will always find cookies, or a pie, or a cake of sorts if you drop by. So I am always on the look our for new recipes to try. And if I can find a healthy treat or desert all the better.

With the mercury climbing we have been looking for deserts and treats that are cool and refreshing. More often than not we make smoothies. And that was the plan yesterday. However, I was out of kefir and so I tried to use homemade Greek yogurt instead. Well, much to my surprise the concoction of frozen strawberries and bananas and yogurt was not a smoothie but rather a delicious frozen yogurt! The girls devoured it! And then they asked me to make it again tonight. That's when I knew I had a winner.

Not the best photo. It was melting faster than I could take the picture. But don't let the its looks dissuade you. This is one healthy, frugal treat. And I am sure it would be good with a variety of other fruits. Blueberries come to mind first.

What are your favorite summer treats? As I said I am always on the look out for more tasty recipes.

Menu Plan - Week of January 31st

I had to chuckle the other day. A friend of ours was trying to figure out what to have for dinner. We gave then a bunch of suggestions - spaghetti, burgers, corn chowder, pancakes, and more. Unfortunately none of them worked out. This family ended up heading to the local pizza joint. Now I love a night off from the kitchen as much as the next gal. However, unexpected trips to the local take out place add up to a blown budget. So when asked why I menu plan, my number one reason is to save money! I feed our family of 5 on $80.00 a week. And I know I couldn't do this without menu planning. Not to mention the 4pm stress of what are we going to have for dinner doesn't exist!

Simple Woman's Day Book

FOR TODAY ~ Tuesday, May 25th

Outside my window...The sun is shinning and the birds are busy at the feeder and the chickens are pecking in the grass.

I am thinking... Being a wife, a mother, and a homemaker. It saddens me to see how these rolls are being pushed aside for something "bigger", something "better". When really is there anything truly bigger or better than being a wife and a mother? I find so much joy in taking care of my family, feeding them, keeping a home for them. I can't imagine doing anything else. It truly is an honor.

I am thankful for... My beautiful family, our wonderful friends, and the gorgeous place we live.

From the learning rooms... Ordering our end of year tests, as we have decided to take that route this year. Finishing up math with Sarah. The last book club for Sarah. Selecting a new family read-a-loud.

From the kitchen... Tortillas with the "new" press, oatmeal~wheat bread, coffee cake, and pineapple pie. And on the dairy list - finish the kifer, yogurt, and mozzarella. And I am going to try my hand at kombucha.

I am wearing... My favorite white blouse, my long denim skirt, and my "new" floral apron, my uniform of sorts.

I am creating...I just finished the square for A Blanket of Love, I cried and prayed for this little boy and his father. I've cast on Sarah's sweater, but haven't gotten very far yet. I also have some bread bags and a laundry apron in the works.

I am going... The the ocean later this week. We have a homeschool field trip with the coast guard leading a tour of two light houses. The girls and I can't wait. I love the ocean.

I am reading... or thumbing through would be a better way of putting it: A stack of Mary Jane Farm magazines that a friend lent me.

I am hoping... To get the rest of the garden planted and that we wont have a frost. The peas, spinach, onions, and broccoli look good so far.

I am hearing...Nothing but the songs of the birds outside and the rhythmic breathing of my little one still asleep. Beautiful, peaceful quiet!

Around the house...A good mopping of the kitchen floor and scrub of the tub and then its outside. The wood shed needs a good hauling out.

One of my favorite things... Lemonade! I seemed to have forgotten how delightful a tall cold glass of lemonade is on a hot day. The pantry is full of bottles of organic lemonade I pick up for a song last week, but now I am thinking we may need to make some homemade.

A few plans for the rest of the week: Bike ride with the girls, Sew, Knit, Cook, Garden and Read!

Here is picture for thought I am sharing...

My City girl wasn't sure what to make of this snake that just wanted a kiss.

From the Kitchen

We woke this morning to rain and this really was a good thing. First the garden need it. It has been so dry. And secondly, we had a lot to do in the kitchen today. If the sun had been shining it would have been hard to stay in and bake. So the rain was good.

I try really hard to stay away from pre-made processed foods. I takes a little more work on my part, but the savings to the pocketbook and our health is more than worth it. Actually, it is a fact that we wouldn't be able to eat as well as we do if I had to purchase it all from the grocer. Have you ever noticed how junk food is cheaper than good food? But that is a topic for a whole other post.

On the list to make today was granola, bread, muffins, tortillas, oat cakes, and yogurt (that's what's wrapped in the towels). It was a delightful day in the kitchen. All the girls helped out and it didn't take long to get all of this made. We were done before lunch. And as luck would have it the rain stopped and sun began to peek out. Isn't is wonderful when the weather cooperates?

So what are you making in your kitchen? I love trying new recipes and so if you wouldn't mind sharing leave a comment and a link. Bon appetit!

Aren't They Cute?

We went with our homeschool group to a local goat farm. There were a bunch of babies. This little guy is about six weeks old. There were a few babies born yesterday that were still with their mothers and a few mamas still waiting to give birth.

The girls had a great time petting the goats and tasting the milk and cheeses. Hannah loved the cheese - what a surprise. we brought home a quart of milk to make yogurt. Yummy!

We learned so much about goats. Did you know. . .

  • That a goat produces a gallon of milk per day?

  • That more goats are milked in the world than cow?

  • That goats milk is more easily digested than cows milk?

Oh how the girls and I wanted to bring home a couple of goats. Wouldn't it be great to have fresh milk every day? Unfortunately we don't have the property for a pair of goats. Maybe at the next house.
