Pancakes

Pancakes are one of the favorite breakfast food in this house. We looked for quite a while for a homemade pancake recipe that everyone liked. This one was the best and so we have stuck with it for quite a while now. It is quick and easy. Even our 8 year old can make it all by herself.
  • 3 cups of flour
  • 2 tsp salt
  • 6 Tbsp sugar
  • 3 1/2 tsp baking powder
  • 3 eggs, lightly beaten
  • 6 Tbsp butter, melted
  • 2 to 2 1/2 cups milk

Sift together the flour, salt, sugar, and baking powder. Add eggs and and mix slightly. Add butter and enough milk to make batter the consistency you prefer. Cook both sides on a hot griddle.

We serve these butter and "real" maple syrup. They are fabulous with blueberries, bananas, peaches, or chocolate chips added.
