Basil and Pesto

The Basil Fairy has struck again. You can imagine my surprise when I went to let the chickens out this morning and found not one, but two large shopping bags overflowing with fresh from the garden basil. By the time I thought to take a picture, Sarah was already making pesto from the first bag. So that's why there is only one bag in the picture.

Sarah and the rest of the family LOVE fresh pesto. So of course she thought the arrival of the Basil Fairy was the coolest. We ran to the store to get pine nuts and cute little jars. Then she was off to the kitchen. It wasn't long before she had nine beautiful jars of fresh pesto. The sweet girl that she is she delivered one jar to the Basil Fairy and the rest to our freezer. I love being able to pull a little bit of summer green out in the middle of winter.

Pesto

  • 2 cups packed fresh basil
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup extra virgin olive oil
  • 1/2 cup pine nuts
  • 3 medium sized garlic cloves, minced
  • salt and freshly ground black pepper to taste

In the bowl of a food processor, combine the basil and pine nuts. Pulse a few times. Add the garlic and pulse a few more times. Slowly add the olive oil in a constant stream while the food processor is running. Stop to scrape down the sides of the bowl. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.

Makes 1 cup

Menu Plan - Week of January 31st


I had to chuckle the other day. A friend of ours was trying to figure out what to have for dinner. We gave then a bunch of suggestions - spaghetti, burgers, corn chowder, pancakes, and more. Unfortunately none of them worked out. This family ended up heading to the local pizza joint. Now I love a night off from the kitchen as much as the next gal. However, unexpected trips to the local take out place add up to a blown budget. So when asked why I menu plan, my number one reason is to save money! I feed our family of 5 on $80.00 a week. And I know I couldn't do this without menu planning. Not to mention the 4pm stress of what are we going to have for dinner doesn't exist!

Breakfast: Homemade Yogurt and Granola
Lunch: Ski Day Picnic - Hummus, Veggies, Cheese, Crackers, Apples, Blueberry Muffins
Dinner: Apres Ski Party

Tuesday
Breakfast: Poached Eggs on Wheat Toast and Grapefruit
Lunch: Alphabet Soup and Crackers
Dinner: Chicken, Mushroom Quinoa Pilaf and Broccoli
To Do: Thaw Pesto and Ham


Wednesday
Breakfast: Sour Cream Coffee Cake
Lunch: Orzo with Pesto and Tomatoes
To Do: Soak Beans make yogurt & kefir

Thursday
Breakfast: Oatmeal Bar
Lunch: Tuna Wraps and Apple Slices
Dinner: Black Bean Burritos and Mexi Rice
To Do: Make Tortillas

Friday
Breakfast: Cheese Omelets and Oranges
Lunch: Mac & Cheese with Carrot Sticks

Dare I say I think summer is here!  After a week of rain the sun is shining and the mercury is climbing.  Of course that means more grilling, more salads, and more fresh fruit and veggies.  The farmers markets and stands are starting to open.  Oh I just love being able to get local produce.  And hopefully our garden wont be far behind.

Menu Plan - Week of January 24th


Ok, so I'm a little late posting this weeks menu. We had a cold snap about 10 below zero yesterday and this morning which left us scrambling to get the chickens taken care of as well as our own water - it has a tendency to freeze in various parts of this old house of ours. The chickens are fine minus a few frozen, cracked eggs and we have water thanks to a few strategically place heat tapes.

Now back to our regularly scheduled programing - the menu. And yes the older girls did ski in this COLD weather.

How Does Your Garden Grow?

Spring comes late here in New Hampshire and after the long winter I am always anxious to get the garden in the ground. Some years I don't wait long enough and Jack Frost pays us a visit and lots of hard work can be lost over night. This year I only lost a few seedling that we had started inside. And now with the first day of summer quickly approaching the garden is looking pretty good.


We've planted quite a few different varieties of peppers and many of them already have small fruits on them. We love peppers; both sweet and hot! Hopefully the pantry will be full of pickled banana peppers by fall.

This is our second year planting onions. Last years harvest was small, but delicious. And the onions wintered well. Hopefully these white and red varieties will do as well.


Sarah has been my garden helper this year. The others help, but loose interest much more quickly. Weeding, planing, weeding, watering, loving~ the rhythm of the garden. So peaceful!


Lots and lots of bush bean! We ate and froze quite a bit last year and hope to put up more this year.




The peas are starting to climb. And the first flowers were discovered just this morning. If I can keep Rebekah and Hannah out of the peas we might get some put up for winter. Last year they are them as they picked!


We also have three varieties of potatoes, spinach, broccoli, cucumbers, yellow squash and zucchini planted. The spinach is ready to harvest and the rest of it is looking good. Even the yellow squash that the bear stepped on is coming along.

The herb garden smells devine! Chives, dill, taragon, rosemary, basil, and garlic. I hope to dry some of our own herbs this year. And Sarah will be making pesto. We may add some parsley and cilantro.

My mouth is watering now thinking of all the yummy fresh goodness we will be eating soon. And the farmer's market opens on the 26th. I can hardly wait!

Menu Plan Monday ~ Week of August 29th

Menu planning is a foundational and grounding exercise for me. Having a menu plan keeps me sane during our crazy days. Rarely do we come to a meal time and panic. The plan also unites and balances our family as we come together for meals through out our busy days. Sitting down to the table with my family around, lighting a candle and reciting a meal time blessing is one of my favorite times of the day. I look forward to everyone sharing their plans and wishes for the day at breakfast and their accomplishment and highlights at supper.

I also use my menu plan to insure that my family is getting wholesome and nutritious food. When it is all laid out I can see the amounts of fruit and veggies everyone is getting. I also make sure that proteins are balanced. And now I'm checking to make sure we all get a variety of grains. Recently there has been a huge increase in the number of people who are sensitive to wheat and corn. Personally, I feel that much of it is due to the pesticides used and the GMO varieties. I also think it stems from modern day methods of preparing wheat and corn, as well as the gross amount many of us eat. If you read food labels you know it is almost impossible to avoid corn. There are so many fabulously nutritious grains out there. How come we aren't eating them? Well I vow to get more of them into my families diet. Weekly Menu Plan


I know it has been a while since I've posted the family menu plan. Summer tends to see the menu plan fly out the window as we eat whatever may have come out of the garden that day or pack an impromptu picnic and head to the lake for an evening of canoeing and kayaking.

While fall truly here I have felt a need to begin planning the weekly menus again. I have been for a few weeks now, but haven't found the time to post them. Hopefully, they will make it to the blog along with the new recipes regularly.

The weather is starting to warm up and I am itching to make some summer type food. So you will see a couple of summer salads this week along with some sandwich type dinners. We also have a few busy weeks coming up. Sarah is in the final couple of week of production for her play and Doug is gearing up for school. That means a lot of running and not a lot of time in the kitchen for complicated meals.

Menu Plan Monday - Week of August 22nd


Back to school mean back to some old favorites. While homeschooling three children, getting frugal healthy meals on the table takes some planning. We fall into a nice rhythm that make meal preparation more of a pleasure than a chore. Breakfast stay the same only changing how the eggs are cooked, what kind of muffin, and rotate between pancakes, French toast and waffles. As the weather cools Swiss oats will become hot oatmeal. We all come together for breakfast. So very 40's I know, but I love to start the day together around the table.

Breakfast: Homemade Yogurt and Maple Almond Granola
Lunch: Left overs from the weekend
Dinner: Homemade Personal Pizzas

Tuesday
Breakfast: Blackberry Muffins
Lunch: Mac and Cheese with Peas
Dinner: BLT's, Potato Salad, and Veggie Sticks

Wednesday
Breakfast: Swiss Oats with Fresh Berries
Lunch: Tuna Wraps and Apple Slices
Dinner: Black Bean Burritos and Mexi Corn

Thursday
Breakfast: Crepes with Ricotta Cheese Filling and Fruit
Lunch: Hummus with Pita Bread and Veggie Sticks
Dinner: Pork Chops with Pesto, Rice and Broccoli

Friday
Breakfast: Fried Egg Sandwiches on English Muffins
Lunch: Hot Dogs
Dinner: Homemade Pizza

Saturday
Breakfast: Waffles
Lunch: Grilled Cheese and Fruit
Dinner: Grilled Chicken, Potato and Squash Torte, and Green Beans

Sunday
Breakfast: Cinnamon Toast
Lunch: Leftovers
Dinner: Spaghetti, Garlic Bread and Sauteed Zucchini
