Well the temperatures are starting warm up a bit and the sap isn't flowing quite as much, but for our first attempt at making maple syrup I think we did pretty well.
We only tapped three trees is our back yard and from that will probably end up with about a gallon of syrup. The two outside jars were the first ones we boiled down. They are much lighter in color and taste. The middle ones are a darker amber grade and what we prefer.
I'll miss the sweet smell when we are done boiling, but not the constant watch. I am grateful to have those beautiful jars line my pantry waiting for the next batch of pancakes or french toast.
