Three Bean Salad


This simple salad is a family favorite. And with the days finally getting a little warmer, it was the perfect side dish for our sloppy joes the other night.


Salad

  • 1 can cut green beans, drained
  • 1 can wax beans, drained
  • 1 can dark red kidney beans, drained and rinsed
  • 1 green pepper, seeded and chopped
  • 1 onion, chopped

Dressing

  • 2/3 cup balsamic vinegar
  • 1 1/3 cup extra virgin olive oil
  • 2 Tbsp Italian Seasoning
  • 1 clove garlic, chopped
  • salt & pepper to taste

Mix beans, green pepper and onion in a medium bowl. Measure dressing ingredients into a glass jar, cover and shake well. Pour dressing over beans and mix. Cover and refrigerate at least 1 hour before serving.
