Yarn Along -

It has been a while since joining the weekly Yarn Along, not for lack of knitting or reading mind you, but just not the time to blog about it.

Last night I was able to finish this scarf that a woman in town has asked me to knit to match one of her favorite hats. What an honor. I have never knit for anyone except family and a gift for my best friend. So being asked to knit for someone I hardly know was a true blessing and honor. Thanks to the ladies at our local yarn shop, Close Knit Sisters, for all the help selecting the perfect yarn. You can find the free pattern and my notes on Ravelry. Those that know me, know purple is my favorite color. I would really love to keep this for myself. I just hope the recipient loves it as much as I do.

As for reading, I have been busy working my way through the Family Herbalist course from Vintage Remedies. WOW! I am learning so much. It is so freeing to know I can have such a positive impact on my family's health. Thanks for my mother-in-law for such an awesome Christmas gift.

Dinner: Cod, Barley and Mushroom Casserole, Creamed Kale

WEDNESDAY
Breakfast: Homemade Yogurt and Maple Almond Granola
Lunch: Polenta Chicken Nuggets, Apples and Veggie Sticks

THURSDAY

Lunch: Quinoa with Roasted Veggies
Dinner: Baked Chicken with Brown Rice and Carrots

Healthy Banana Oat Muffins

Healthy Banana Oat Muffins

1 ½ cups white whole wheat flour
1 tsp baking soda
½ tsp baking powder
1 teaspoon cinnamon
¼ tsp cardamom
½ tsp nutmeg
1 cup oats
½ cup rapadura (or brown sugar)
½ cup evaporated cane juice (or your choice of sugar)
1 egg
2-3 bananas mashed
¾ cup raw kefir (or milk)
½ cup coconut oil (or oil of choice)

Preheat oven to 400 and line or grease muffin pan.
Combine flour through sugar in a large bowl
In a separate bowl mix egg through oil
Pour wet ingredients into dry and mix until well incorporated
Pour batter into muffin cups and bake for 17 or so minutes.
